Chocolate Chip Cookie Cheesecake Recipe
A buttery chocolate chip cookie base, a creamy milk chocolate filling, packed with chunks of cookie, topped with a rich chocolate ganache, and of course more cookies
This cheesecake is so rich and chocolatey, and there’s no baking involved
How To Make Chocolate Chip Cookie Cheesecake Recipe
All you need is:
Base:
350g crunchy cookies, crushed
100g unsalted butter, melted
Cheesecake:
200g milk chocolate, melted & cooled
350ml double cream, cold
500g cream cheese, room temp
120g icing sugar
100g crunchy cookies, broken into pieces
Topping:
200g dark chocolate, broken into chunks
200ml double cream
8 crunchy cookies, halved
Tips:
Make sure your cream cheese is at room temperature
Let the milk chocolate cool before adding it to the cream cheese & icing sugar mix
Allow the ganache to cool for at least 15 minutes before pouring it over the cheesecake
You can always add the cookies to the top just before serving to keep them crunchy, they will stick to the ganache
INSTRUCTIONS
Add 350g of cookies to a blender and blend them finely.
Pour the crushed cookies into a bowl and add 100g of melted unsalted butter.
Mix until combined.
Pour it into an 8" cake and press down firmly.
In another bowl add 200g milk chocolate and microwave it, stirring every 30 seconds until melted.
Allow it to cool.
In another bowl, whisk 350ml double cream to stiff peaks.
In another bowl, add 500g cream cheese and 120g icing sugar and whisk until creamy.
Add your melted chocolate to the cream cheese icing and whisk until combined.
Fold the whipped cream into the mix.
Fold 100g of broken cookies into the mix.
Scoop the mix onto the base and smooth it out.
Refrigerate overnight.
In a bowl add 200g dark chocolate and 200ml double cream and put it in the microwave, stirring every 30 seconds until melted.
Stir the melted chocolate mixture until combined, then leave to cool for 15 minutes.
Pour the melted chocolate mix over the cheesecake and smooth it out.
Add 8 halved cookies to the top of the cheesecake, in a circle.
Refrigerate for 30-60 minutes.
