Cinnamon French Toast Breakfast Muffins


Cinnamon French Toast Breakfast Muffins Recipe


 these French toast muffins are perfect for breakfast and they taste so so good!

You can have them warm with syrup or wrap one up and take it with you on the go 


 

All you need is:


6 slices bread (cut into 2cm slices)

3 large eggs

80ml milk

1 tsp vanilla extract

2 tsp cinnamon


Cinnamon sugar:

2 tbsp granulated sugar

1 tsp cinnamon


Makes about 6 muffins


Store in the fridge and reheat in the microwave when you wanna eat them. You can also freeze them 

INSTRUCTIONS

Cinnamon French Toast Breakfast Muffins


Preheat your oven to 180°C/ Gas Mark 4/ 160°C (fan).


Line a cupcake tray with 6 cupcake cases.


Cut 6 slices of bread 2cm thick.


Cut the crusts off the slices.


Slice the bread slices into small cubes.


In a large bowl whisk together 3 large eggs, 80ml milk, 1tsp vanilla and 2tsp cinnamon until combined.


Pour your bread cubes into the cinnamon mix and coat them.


Cover the bowl with cling film.


Refrigerate for 2 hours minimum.


In another bowl mix together 2tbsp granulated sugar and 1tsp cinnamon until combined.


Scoop the bread cubes into your cupcake cases.


Cinnamon French Toast Breakfast Muffins
Sprinkle the cinnamon sugar mix over the bread cube cupcakes.


Bake for 25 minutes.


Drizzle them with maple syrup or honey (optional).
