Cinnamon Roll French Toast Rolls
If you love cinnamon as much as I do, you need to try these super easy French toast roll-ups!
They taste just like mini cinnamon rolls The inside is buttery and cinnamony, the bread is warm and doughy and the cream cheese icing is just the perfect finishing touch
All you need is:
Cinnamon butter:
70g unsalted butter, softened
50g light brown sugar
1 tbsp cinnamon
French toast:
8 slices of soft bread
2 medium eggs
60ml milk
1 tsp vanilla extract
Coating:
50g granulated sugar
1 tsp cinnamon
Cream cheese icing:
20g unsalted butter, softened
60g cream cheese, room temperature
25g icing sugar
Makes 8 rolls
INSTRUCTIONS
Mix together 70g softened unsalted butter, 50g light brown sugar and 1tbsp cinnamon until combined.
Cut the crusts off 8 slices of bread.
Roll the slices of bread flat with a rolling pin.
Spread the cinnamon butter on each slice of bread.
Roll them up tightly.
In another bowl, whisk together 2 mediums eggs, 60ml milk and 1tsp vanilla until combined.
Dip the rolls in the mix.
Melt some butter in a pan and toast each side until golden on each side.
Mix together 50g granulated sugar and 1tsp cinnamon in a bowl.
Coat the rolls in the sugary mix.
In a bowl mix together 20g softened unsalted butter, 60groom temperature cream cheese and 25g icing sugar until combined.
Pipe the icing over the rolls.
