If you love cinnamon rolls you need to make these pancakes
Thick, fluffy pancakes, swirled with a sweet and buttery cinnamon swirl that caramelizes into the pancake when cooked, topped with cream cheese icing so good!
How To Make Cinnamon Roll Pancakes recipe
All you need is:
Pancake batter:
30g unsalted butter, melted & cooled slightly
1 large egg, lightly beaten, room temp
110ml milk (any), room temp
120g plain flour
2 tbsp caster sugar
2 tsp baking powder
1/4 tsp salt
Cinnamon swirl:
30g unsalted butter, melted & cooled
40g light brown sugar
2 tsp cinnamon
Cream cheese icing:
30g cream cheese, room temp
30g unsalted butter, softened
40g icing sugar
Makes about 6 pancakes
Tips:
Don’t swirl the cinnamon mix too close to the edge of the pancake otherwise, it will spill over when cooking
If your cream cheese icing is lumpy, microwave on low for 10 seconds and stir until smooth
INSTRUCTIONS
In another bowl add 120g plain flour, 2tbsp caster sugar, 2tsp baking powder, and 1/4tsp salt and whisk in combined.
Pour the wet mix over the dry mix and whisk until thick and smooth.
Let it rest for 10 minutes.
In another bowl whisk together 40g light brown sugar, 2tsp cinnamon, and 30g melted unsalted butter until combined.
Add 1tbsp of your pancake mix to the cinnamon sugar and mix until combined.
Dollop 1/4 cup of your pancake mix onto a frying pan on low heat.
Put the cinnamon sugar in a piping bag and swirl it onto the patch of pancake batter.
Once bubbles form, flip the pancake and cook on the other side.
Repeat steps 7-9 for all of the pancake mix and cinnamon sugar.
For the drizzle, mix together 30 groom temperature cream cheese, 30g softened unsalted butter and 40g icing sugar, mixing until smooth.
Drizzle your icing over the pancakes.
