Fudgy White Chocolate Biscoff Blondies
These blondies are so fudgy, they’re packed with white chocolate, white chocolate chips, chunks of Lotus biscuits and a swirl of melted Biscoff spread
All you need is:
225g white chocolate, broken into chunks
115g unsalted butter
2 large eggs
70g granulated sugar
2 tsp vanilla extract
155g plain flour
1 tsp salt
100g white chocolate chips
50g Biscoff biscuits, broken into chunks
60g Biscoff spread, melted
Tin size: 8x8”
Bake 150C (fan) 20-25 mins - or until the top is lightly golden (if you over bake them, they will become cakey)
INSTRUCTIONS
Preheat your oven to 170°C/ Gas Mark 3/ 150°C (fan).
Line an 8x8 inch baking tin with baking paper.
In a bowl, melt 225g white chocolate and 115g unsalted butter in the microwave, stirring every 30 seconds until smooth.
In another bowl whisk 2 eggs until foamy.
Add 70g granulated sugar and 2tsp vanilla to the eggs and whisk until combined.
Pour in the white chocolate mixture and whisk it in.
Sift in 155g plain flour and 1tsp salt and fold until combined.
Fold in 100g white chocolate chips and 50g broken lotus biscuits.
Scoop the mix into your baking tin and smooth it out.
Drizzle 50g melted biscoff spread over the top and swirl it through with a knife.
Add 9 diagonal lotus biscuits to the top.
Bake for 20-25 minutes.
Refrigerate overnight.
