Oreo Stuffed Funfetti Blondies Recipe

A soft fudgy, white chocolate blondie, with a crunchy, sugary, sprinkled crust, stuffed with Golden Oreos
How To Make Oreo Stuffed Funfetti Blondies
All you need is:
340g white chocolate, broken into chunks
170g unsalted butter
3 large eggs
105g granulated sugar
2 tsp vanilla extract
230g plain flour
1 tsp salt
100g white chocolate chips
50g sprinkles + 100g for the top
16 Golden Oreos
Tin size: 8x8”
Bake until the top looks crisp and light golden brown in colour
Tips:
Carefully turn the blondie around in the oven halfway through if your oven bakes unevenly (like mine does)
Allow cooling fully in the tin before slicing. You can also refrigerate it for a few hours to make it firmer
INSTRUCTIONS
Preheat your oven to 170°C/ Gas Mark 3/ 150°C (fan).
Line a square baking tin with baking paper.
Put 340g white chocolate and 170g unsalted butter in a microwaveable bowl and place it in the microwave, stirring every 30 seconds until melted and smooth.
Set it aside to cool.
In another bowl, whisk 3 large eggs until foamy.
Add 105g granulated sugar and 2tsp vanilla to the foamy egg and whisk until combined.
Add the white chocolate mix to the egg mix and whisk until fully combined.
Fold 230g plain flour and 1tsp salt into the mix until just combined.
Fold 100g white chocolate chips and 50g sprinkles into the mix.
Scoop half the mix into your baking tray and smooth it out.
Place a layer of 16 golden Oreos on top of the dough in your baking tin.
Cover the top with sprinkles.
Bake for 30 minutes.
Allow it to cool fully in the tin.
