How To Make Mini Funfetti Cheesecakes Recipe
Mini Funfetti Cheesecakes is so delicious and to make this easy recipe All you need is the following ingredients:
INGREDIENTS
Base:
- 200g Golden Oreo’s (or custard creams)
- 60g Unsalted butter, melted
Cheesecake:
- 450ml double cream, cold
- 350g cream cheese, room temp
- 150g icing sugar
- 1 tsp vanilla extract
- 1/4 tsp almond extract (optional)
- 40g sprinkles
Topping:
- Remaining whipped cream
- Sprinkles
Makes 9 cheesecakes
Line a cupcake tray with 9 cupcake cases.
INSTRUCTIONS
Add 200g Golden Oreos/ Custard Creams to a blender and crush them finely.
Pour the crushed biscuits into a bowl and mix with 60g unsalted butter until combined.
Pour your mixture evenly into your cupcake cases and press down firmly.
In a large bowl, whisk 450ml double cream to stiff peaks.
In another bowl whisk together 350 groom temperature cream cheese, 150g icing sugar, 1tsp vanilla extract and 1/4tsp almond extract until fully combined.
Fold half of the whipped cream and 40g sprinkles into the cream cheese mix.
Evenly scoop the cream cheese mixture onto each of your bases and smooth it out.
Freeze the mini cheesecakes for 30-69 minutes.
Pipe the rest of the whipped cream on top of each cheesecake and top with sprinkles.
