How To Make Reese’s Peanut Butter Cup Mini Cheesecakes Recipe
INGREDIENTS
Base:
- 200g Oreo’s, finely crushed
- 60g Unsalted butter, melted
Cheesecake:
- 250ml double cream, cold
- 350g cream cheese, room temp
- 120g icing sugar
- 100g smooth & creamy peanut butter
Topping:
- 150ml dark chocolate
- 150ml double cream
- 80g Reese’s cups mini’s
- Makes 9-10 mini cheesecakes
INSTRUCTIONS
Line a cupcake tray with 9 cupcake cases.
And add 200g crushed Oreos, then 60g melted butter to a bowl, then mix until combined.
After that scoop your base evenly into your cupcake cases, then press them down firmly.
In a large bowl whisk 200ml double cream to stiff peaks.
In another bowl, whisk together 400g cream cheese, 100g icing sugar and 100g peanut butter until creamy.
Add the whipped cream to the cream cheese mix and fold it in until combined.
Evenly add the cream cheese mix into your cupcake cases and smooth them out.
Put it in the freezer for 30-60 minutes.
Melt 150g dark chocolate and 150ml double cream in the microwave on medium (600W) for one minute.
Stir the chocolate milk gently until smooth.
Pour the chocolate mix over each mini cheesecake.
Top them off with Reese's peanut butter cups on the top (optional).
