Golden Oreo Blondie
If you love fancy sweets but don't feel like chocolate, these Golden Blondies Oreos are just the thing for you. It's the vanilla version of my Oreo cookies. They're dense, chewy, and almost dark in texture, with a delicious hint of brown sugar and vanilla and lots of white chocolate chips. Then, in the middle, you'll find a layer of golden Oreos for extra sweetness and a little extra texture. Because sometimes it's good to be extra.

Preheat the oven to 350 degrees Fahrenheit.
Lightly spray the bottom of the pan with non-stick cooking spray, then line it up with parchment paper, leaving an overhang around the sides.
In a large bowl, beat together the butter, brown sugar, and white sugar until the sugar is fully incorporated (about 1 minute) and you no longer see puddles of melted butter.
Whisk in the eggs, yolks, and vanilla extract.
Gently stir in the flour and salt.
Gently stir in the white chocolate chips.
Pour half the amount of dough into the bottom of the mold, then spread it to cover the bottom.
Place a layer of golden Oreos on top (4 rows of 4 cookies).
Pour the rest of the dough over it, then gently spread the dough over it.
Bake in the preheated oven for about 30-35 minutes, or until the top is set and the sides start to pull away from the sides of the pan and a toothpick comes out clean or with just a few moist crumbs. Baking time will depend on your oven and how much you like your blondies.
Cool completely in pan (about 4 hours). Then pull the bars out of the pan using the overhanging parchment paper. Place on a cutting board and cut with a large, sharp knife. Enjoy!
